Weight Watchers

A year of not working out and eating healthy caught up with us fast in 2014. Chris and  I started Weight Watchers on January 5th and have each already shed a few pounds. I bought a couple of WW cook books and joined WW online so I would have a lot of recipes to choose from. Ironically enough, our fav recipe didn't come from either of those places. Enter in Pinterest. I stumbled upon the best chicken salad recipe I've had from Skinny Mom's Website (Fur Mommas count too). I could not believe how tasty this recipe turned out to be and that I was the one who actually made it. Whether you are counting points or not I think you will enjoy it too.


Skinny Chicken Salad Yields 8 Servings Serving Size ½ Cup, 5PP

Ingredients
1¼ lbs. cooked chicken, shredded (about 3 cups)
1 cup celery, chopped (6-7 stalks) *Thank you food processor
½ cup pecans, chopped *And again thank you food processor
1 cup grapes, rinsed + quartered (about 23 grapes) *I used green cause they are my fav
¼ cup green onion, chopped *yep into the food processor
¾ cup light mayonnaise
½ tsp salt
½ tsp black pepper

½ tsp onion powder

Instructions
Cook the chicken according to package instructions. While chicken is cooking, chop the celery, pecans, grapes and green onions. Combine in a large bowl.
In a small bowl, mix together mayo, salt, black pepper and onion powder.
Once chicken has been cooked and cooled (about 10 minutes), use your hands to shred the chicken into the large bowl with the celery, pecans, grapes and green onions. Spoon the mayo mixture on top and stir until everything is evenly coated.

We ate the chicken salad on the Rosemary and Olive Oil Flatouts and it was delish!
